We source from small farms in northern New Mexico and southern Colorado. Our ultra-premium wheat is grown in rich volcanic soil and irrigated with pure snowmelt. Our farmers use regenerative practices to maximize soil health, climate health, and your health!
Our wheat varieties are locally adapted to thrive without chemical fertilizers and pesticides. The genetics are selected for protein quality, color and flavor. Our flours retain all of the fiber and phytonutrients that make whole grains a superfood.
Metate Mill is a traditional grist mill. The massive granite mill stones grind at a low temperature--preserving the nutrients in our flour. We use a slow low grind to produce a fine-textured flour. Our grind performs more like refined flour while still providing all of the health benefits and flavor of whole wheat.
